BLACK TEA

True 'teas' are made from the dried leaves of the Camellia sinensis, the tea plant, which was first cultivated in China and found growing wild in India. Chinese monks and European traders introduced it to Japan, Sri Lanka and other countries. Today there are more than 3000 varieties of tea, each having its own distinct character and named for the district in which it is grown.

Black tea is roll broken after withering, there is no steaming as the enzymes need to remain active. (Withering is moisture evaporating from the leaf.) Roll breaking cracks the surface of the leaf exposing the leaf's enzymes to oxygen initiating oxidation. Oxidation is the process that results in the flavour profiles of Black tea. A traditional Indian beverage made with steamed milk, spices and black tea then sweetened to taste.

Making Chai is easy! Pour 1/2 cup of boiling water over 1 tsp of Chai; let steep 5 mins, then add 1/2 cup of hot milk or condensed milk for greater sweetness. Strain leaves and spices before drinking.

Another suggestion is to simmer 1 tsp of Chai with 1/2 cup milk and honey on stovetop. Gradually add 1/2 cup water. Strain leaves and spices before drinking.

Pouring over ice makes delicious Iced Chai!

This versatile tea can also be prepared like normal tea in a teapot. Plain hot Chai is made like any black tea (steep 5 minutes) or green tea (steep up to 3 minutes). May be enjoyed with a dash of milk or served black - Information Leaflet

Green tea is produced by steaming freshly-picked leaves before heat-drying. After steaming, the leaf is withered then manipulated to achieve the desired leaf finish, then steamed again or pan fired. (Withering is moisture evaporating from the leaf.)

Green tea has a delicate taste and is pale green to golden in colour. It is primarily produced in China and Japan. It is milder and more delicate in flavour than black tea, and is often described as having a fresh, vegetative quality. Rich in Vitamin C and antioxidants, green tea is known for its health benefits. It is also relatively low in caffeine (almost two thirds less than coffee). ROOIBOS

Aspalanthus linearis

Because of its popularity, the Rooibos plant is now extensively cultivated, particularly in the Cedarberg Mountains near the Clanwilliam district of South Africa. In late summer or early autumn, the plants are harvested, cut into short lengths, moistened, bruised, allowed to ferment, and dried in the sun to produce red bush tea which is brewed like ordinary tea to make South Africa's most popular hot beverage. Red bush tea is drunk either plain or with sugar and milk according to the consumer's taste. It is valued highly not only for its refreshing flavour but because it is low in tannin (less than 5%) and is caffeine free.

Rooibos contains at least thirty-seven natural antioxidants, minerals, vitamin C, and alpha-hydroxy acids.

Rooibos can be used as a milk substitute for infants who are prone to colic.

Pearls

Pearls are green tea that consist of the bud and the first two leaves, hand-rolled into small pea sized balls. To infuse just pour nearly boiling water on 2-3 pearls in a teacup and infuse for 3 mins. Can be re-infused for all day drinking.
